chicory coffee, made with mocha, poured into a decorated cup

The moka is one of the best ways to make an excellent Chicory Coffee. Let's see how in this step-by-step guide.

Making a good coffee in moka seems easy. And maybe it is.

The precautions to be taken when using chicory root powder are easy:

  • fill the filter only halfway
  • keep the heat low (we don't want to burn the chicory powder)

But you could do better.

Minimize the residence time of the powder in the filter when the moka is on the flame, for example.

In this short article I show you step-by-step the method I use.

I discovered it by listening this podcast (in italian) . If you know a little Italian I suggest you give it a listen.

But now let's see all the steps to make a delicious Chicory Coffee, healthy and that never tastes burnt.

1. Fill the tank

Start by putting the water in the moka tank, the bottom piece that comes into contact with the flame.

The eternal question asked by all lovers and not of the moka is:

What is the right water level? Above or below the safety valve?

Life Philosophies. But let's say if you go right in the middle you can't go wrong. 😉

2. Turn on the flame

OK, this step is also taken for granted.

Light the fire. And do something different from what you usually do: start putting the tank on the fire.

We want to let the water boil and, only after this happens, put in the filter, close the moka and let the coffee out.

3. Fill the filter

While the water is on the fire, waiting for the temperature to reach 100 °C, we can start filling the filter.

We will use, of course, ours Chicory Coffee powder .

Warning: as for the barley coffee powder, and as for all the other coarser grinds that can be used in moka, do not fill the filter completely, but only halfway.

This will prevent too vigorous coffee spilling!

4. Put the filter in the tank and close the mocha

Here we are! The water is boiling. Our coffee is close to:

This site is not responsible for all burns and catastrophic accidents that you may cause yourself and others.

  1. Turn off the stove flame
  2. Insert the full filter into the moka tank
  3. Screw - loosely for now - the top piece of the mocha

Be careful not to spill the boiling water anywhere.

closing moka

When you have turned the upper part of the moka sufficiently (until the tank below begins to follow the closing movement) you can tighten everything.

⚠ Use a pot holder or tea towel thick enough and be careful not to burn yourself! ⚠
